When Risotto answers all you're prayers
I've been suffering from one of those days, weeks & months where life is manic, I've not known if I'm coming or going, motivation has been next to nothing and trying to eat healthy has been such a struggle.
I'm so guilty of scrolling through Instagram looking at all these amazing women's body and putting so much pressure on myself. Getting into this vicious cycle was so easy but it's so much harder to get out so this morning I've had to have a long hard chat with myself.
Lets be honest, I'm never going to have one of these slim physiques because I LOVE food. Food is what makes me who I am, on the whole I eat healthy meals every single day but I eat A LOT of it.
I don't want to survive off sparrow size portions and I don't want to torture myself over cravings, I don't want one of these diets where you're not allowed carbs because pasta is life. I have the occasional treat and I enjoy every mouthful, I have to remember how far I've come with my weight journey and whilst I never want to feel or look like I used to, whilst it's always in the back of my mind I know I never will.
So I dusted myself off and got straight back on the horse, I wondered what to have for dinner tonight!
What better way to get a positive relationship back with food with something you love and haven't had in a while.
Creamy Vegetable Risotto, Lovely!!!
A combination of carbs, beautiful vegetables and a creamy sauce (without the cream!!) answers all my prayers! So actually i'm feeling quite smug.
A common mistake people make when cooking risotto is they don't know what rice to use. Never, ever use long grain rice. That's not risotto, in fact I don't even know what that is but just don't. I always use Arborio rice, you can buy it from all main supermarkets and it's exactly the same price as normal rice.
A lot of people tell me when they cook Risotto it just sticks to the pan, keep adding water or stock until the rice cooks and NEVER leave the pans side. As soon as I chuck the rice in I continuously stir whilst always adding water or stock and you're not giving it time to stick (whilst working those arm muscles - win win if you ask me haha)
