Sofia's Sunday Pasta Sauce (Sugo Di Carne)
For most italians it's a Sunday ritual to sit round the table and enjoy a grand multi-course meal, and that wouldnt be the same without good old traditional pasta sauce. It's weird to think that my love of cooking literally stems from the memories I have of family piling round eachothers on a Sunday to have pasta.
I sometimes wonder whether it's really cooking I enjoy or having a house full because where there's food there's people!
Sugo Di Carne (Meat Sauce) or as I like to call it Sunday Sauce uses succulent lamb chops in a thick basil pomodoro (plumb tomato) sauce.
I'd highly reccomend using "Italiamo" passatta, you can buy plain or basil flavoured. If im honest I prefer the plain and then add fresh basil leaves (I didnt have the plain one for photo purposes, sorry!) You can find this down the foreign food aisle down most leading supermarkets. You can of course use other brands of passata.
Using plumb tomatoes instead of chopped uses the best parts of a tomato, sounds silly? Chopped tomatoes tend to be the ends of tomatoes, have you ever noticed when you pour them out the can they you can sometimes see the end or they'll slightly yellow bits?
Plumb tomatoes is the whole tomato meaning there's more substance to your sauce whilst being tastier.
