My meatball pasta bake is famous amongst family & freinds, I've made it for so many but eachtime people ask "How do you get your meatballs perfect when mine always break or they taste really dry" - sound familiar? I'll share my secret with you...
User a food processor!!!
I chuck everything into my blender, it allows the mince meat to become finer meaning the meatballs will hold together better!
I also fry my onions off before putting them in the blender, I dont know why but I find that when I don't do this my meatballs are really dry and dont really taste of anything - they could be completly unrelated but it works for me.
