Fish & Chip Friday's

The strain of having to ignore my salvating mouth every night we walk past the fish & chip shop whilst walking the dog has just about got the better of me.I dont think I realised just how much I miss fish & chip friday's, as we used to call them at home (and then we wonder why we gained weight!), until this week.

After a long week at work, I was craving fish & chips and I couldn't take it any longer. As much as I love fish & chips, and I really do, I hate the way they make you feel after - the grease repeats on your for days and your drinking like a fish (no pun intended) to try and get rid of it. So I knew the perfect solution - make my own!!!

What better way to enjoy Fish & Chips and actually enjoy the way you feel after. I drove to my local supermarket and brought fresh cod lion over the counter. Most cod lions are actually really big, some I brought the largest one I could find and halved it when I got home and that would do 2 people.

I used breadcrumbs instead of making batter, this is light but filling at the same time and again leaves out the greasy part!

I marinaded the cod first in beaten eggs, handful of frsh parsley leaves, parmesan and leave to marinade in the fridge (ideally the longer the better, normally 1-2hours, but I was rushing so this time only left to marinade for 30 minutes).

After, I lightly coat in breadcrumbs and bake in the oven for 30minutes until fish is cooked and breadcrumbs are crisp.

With a side of homemade chips & salad this really was the perfect friday night in! (and maybe the start of fish & chip friday again)
