Honey I'm Home!!
Whilst being on holiday for 2 weeks is great, nothing beats homemade food!! The first few days of all-inclusive you pile up your plates with a concoction of anything in sight - seafood pasta next to your sweet & sour chicken not to mention the steak which you see the chef cooking but it would be rude not to have handful of chips which we can just about manage to fit onto the side. Sounds disgusting right? Somehow that concoction of food is acceptable because your on holiday and you've paid for it but if that was at home we'd look at it and think "are you having a laugh!!"
By the second week I was itching to get home to my kitchen and serve up some delicious homemade food (you can tell I don't get out much!).
So to celebrate being reunited with my beloved hob & oven I decided it was time for a Mexican Night with Chicken Fajitas & homemade salsa. It's the perfect meal for when you return off holiday; it's light, quick, easy & not to mention super tasty! So say "Adios!" to the ElPaco fajita kits because this is just as easy & you know exactly whats going in it.
The easy part= Spices! Paprika,cumin, chili powder and oregano kicks off the spice mixture to add to your chicken & peppers.
The impressive part= Homemade tomato salsa - a good blend of juicy cherry tomatoes, red onion,salt & parsley is all there is to such a tasty addition to your fajitas.
The hard part - wrapping your tortilla (or is that just me?!)
I use wholemeal tortillas as this is a slightly healthier option but the choice is of course all yours! Top your tortilla with your chicken mixture, shredded iceberg lettuce, cheese and of course the homemade salsa and you'll be dancing around in mexican hats before you know it!
Wait, it doesn't end there! What's a Mexican night without nachos?! There's always plenty of salsa left & I always have a bag of tortilla chips in my cupboard (don't ask!), in an oven proof dish add the tortilla chips and top with the homemade salsa and grated cheese. Place under the grill for 3-5 minutes until cheese is melted and tortilla chips are crisp.
All of this ready in just 30 minutes!
