Calling all white wine lovers!

That got your attention didn't it?!

Dont shoot me though, we're putting our white wine to the pan and not our wine glasses. Yes sorry I said it, but it's so worth it.

White Wine Chicken (featuring the most conventional name ever) is definately a family favourite in our household, my mum first made this for us holidaying in Sardinia and we just can't get enough of it. This recipe consists of chicken thighs, red peppers and onions simmering in olive oil and white wine for about 45 minutes, the aim is to get a thick almost creamy sauce. The longer you leave it the better it tastes!

I dont use expensive wine, I tend to by dry white wine ranging around £3.

I use Chicken Thighs for this recipe however I speak to a lot of people that dont like chicken on the bone, you can use chicken thigh fillets as they work and taste just as good. Granted this isn't the healthiest of meals with the oil and wine however i always remove the skin from chicken thighs as this is also very fattening. I served this dish with italian roast potatoes (recipe available on the blog), fresh salad and warm french stick! The sauce is so moreish you want to lick to your plate clean hence that's what the bread is for.

This dish requires little in the way of herbs and spices as the wine and oil do it all for you.

Just look at those colours, it makes my mouth water just thinking about it?

I use my Paella pan to cook this dish in, a normal frying pan is absolutely fine however I would recommend using frying pan that's deep enough to hold all the ingredients.

Always,always, always make sure your chicken it thoroughly cooked. The best way to do that is cut the biggest part of the thighs and if its all white and clear juices come out then your good to go.
