3 Ingredients For A Chicken Marinade

With a few days of sunshine surely that means we start getting the BBQ's out?! There's nothing worse than bland food and tough meat so marinade solves both those problems. Marinade is commonly used to flavour food and tenderise meat, it often consists of; oils, herbs and spices depending on the cuisine.

There's lots of different marinades depending on the flavour you're looking for but the most common one I use consists of 3 ingredients;

Lemon Juice

Dried Oregano

Salt

When marinating your chicken you should always 'score' the meat, what I mean by this is to slice the piece of chicken with small shallow cuts to allow the marinade to distribute the flavour. In a bowl, add lemon juice, oregano and salt to your chicken breast and mix well so all pieces of chicken are well covered, cover the bowl and leave in the fridge to flavour. For best results I marinade over night or all day, however if you forget which most of us do I try to aim for a minimum of an hour.

For 4 chicken breasts I would use 1tbsp lemon juice, 1tsp salt & oregano, It doesn't have to be fresh lemon juice, I buy the bottled lemon juice which you can find down home-baking aisles in leading supermarkets, that way I've always got it in the cupboard!

Place on the bbq or grill pan for 5-10 minutes each side until the chicken is cooked.

Winner!
