Celebrating National Paella Day!!
Yes there really is a day called National Paella Day, but i'm not complaining as I love paella so to celebrate I decided that's what we would have for dinner!
For those that haven't had it before paella is a traditional spanish rice dish, very similar to italians and risotto. For those that haven't had risotto, your missing out on both so you need them!!
There's always been this fear of whether we should be mixing meat & fishes in food but if the spanish do it then it's fine! You can of course make to your own choice of a meat only, fish only or do what I have done and mix the two. There's so many different variations and that's what I love, not the same old boring dish you make week in and week out. The chorizo add's flavour, spice and oil that's why I try to use very little oil when cooking this dish as it really doesnt need it.
What really makes a paella dish though is the use of Saffron, it's quite hard to find and quite expensive in supermarkets.Just as a little tip I've found it's actually cheaper to buy in europe so if you ever go to a supermarket pick yourself up a few to last you a while (That's if your a complete saddo like me with food on the brain 24/7). You only need a tiny bit and the flavour it adds is unbelieveable, my mouth is watering just at the thought.
The trick is to not let the rice absorb all the water and stick to the pan, sorry guys but you literally have to stand over this from start to finish adding additional water if needed. Believe me it's so worth it you'll be going up for seconds!!!
