Why parmesan makes the best chicken & potatoes
To celebrate my birthday last week I made my all time favourite dish - breadcrumb chicken and potatoes (I'm easily pleased!). Not just any breacrumb chicken and potatoes mind, certainly not out of the freezer, but Italian Breadcrumb Chicken and Potatoes. What makes them italian? Parmesan!
So it requires a little bit of waiting around in order for the chicken to marinade but trust me it's worth the wait, by leaving the meat to marinade it makes the chicken nice and tender.

After a few hours in the fridge, I then lightyly coat the chicken in wholemeal breadcrumbs. By using wholmeal this is slightly healthier than using white or golden but you can choose whichever you prefer, I place the chicken in a lightly oiled roasting tray and cook in the oven for up to an hour.

And they come out looking this delicious! What I love about chicken done this way is it's perfect for any occasion; main meal served with fresh salad, buffet finger food and even better when there's left overs for a sandwhich!!

The potatoes take roughly around the same amount of time to cook as the chicken so I prepare them altogether.
In a large bowl I mix all the ingredients and place in the oven to cook for approx an hour- it couldn't be any easier, none of this parboiling business that you end up over boiling and serving mash. No instead you're left with a mouth watering oregano & parmesan crispy potatoes.
