Why Frittata Has Become My New Lunchbox Craze
We all get bored or soups and salads at some point when your trying to stay healthy meaning you run the risk of falling off the bandwagon, however, I've found a new lunchbox filler that will keep your on that healthy road.
Frittata is very similar to an omlette or quiche, it's an egg based recipe but with the added ingredient of pasta. Why? Simple answer would be; why not, us Italians will find any excuse to add pasta to something.
Here's a couple of reasons why I'm just loving making Frittata's at the moment;
1. Use up your left over veg as pretty much any cooked vegetables can be used
2. Cost effective
3. Served hot or cold so perfect for lunches, snacks and dinners.
4. Stays fresh in the fridge for up to 5 days, batch cook it at the weekends and make your lunch prep easier
5. Not just for the Vegetarians, you can add meats such as bacon keeping everyone in the family happy
I've uploaded a recipe for a Vegetarian Frittata which uses Red Peppers and Mushrooms, it's soooooo tasty! Remember you can use different ingriedients and I've detailed some examples within the recipe so give it a go and see what you think, i'd love to hear your comments!
